How to make Shrimp Rice Paper Chee Cheong Fun in just 10 minutes.

This is my favourite rice paper hack ever! This Rice Paper Chee Cheong Fun recipe gets you a yummy snack in just 10 minutes.

Chee cheong fun or Chinese rice noodle rolls are a must-order at dim sum or yum cha restaurants. These are thin rice flour pancakes that are steamed and served with a soy sauce dipping sauce – and sometimes a chilli oil! You can order it up plain, but I love mine with shrimp.

How to make Rice Paper Chee Cheong Fun

To make this, all you do is soak the rice paper in warm water for about 5 seconds, or until the rice paper is soft. It would help to do an assembly line. A plate for the rice paper, another plate for the warm water for soaking and another plate to arrange the shrimps on.

Place this on a plate, arrange your shrimps, and fold the rice paper over. Done!

TIP #1: The rice paper gets stick, so make sure to oil it once you’re done! It would help to also oil the container that you are using to cook the chee cheong fun so that it lifts easier.

I like a thin skin, but if you want a thicker, sturdier skin then layer on another softened rice paper.

What Fillings to Use?

I love mine with shrimp! I don’t season mine since I am using the dipping sauce, but you can if you want to. A quick seasoning of salt, pepper and sugar works for shrimp. I love sprinkling on the spring onions for a bit of colour and flavour.

Other fillings that you can try include dried shrimps and char siew.

How to Cook Rice Paper Chee Cheong Fun

Great news: you can cook this in a myriad of ways! Boiling, microwaving or steaming.

My method of choice is steaming it. Since I use just one layer of rice paper, I don’t want to risk breaking it if I boil it. Steam for 5 minutes, or until the shrimp fully cooks. Make sure the shrimp is fully orange, and has curled in.

Microwaving is my next go-to, but the shrimp texture is a bit more inconsistent. I tend to either overcook or undercook with this method. If you can find the right balance, then go for this since it’s the easiest!

How to Serve Chee Cheong Fun?

You have to serve this with the Seasoning Sauce! The sauce is easy to make with minimal ingredients. Adjust according to your preference.

Ingredients

  • Rice Paper
  • 5 Rice Paper Sheets

  • Plate of warm water

  • Neutral tasting oil

  • Filling
  • 15 Shrimps or Prawns

  • Spring Onions

  • Seasoning Sauce
  • 1 tbsp light soy sauce

  • 1 tsp oyster sauce

  • 1 tsp sesame oil

  • 1 tsp sugar

  • 3 tbsps water

Directions

  • Soak the rice paper sheets in the warm water for about 5 seconds, or until it softens.
  • Once soft, lay out on another plate. if you want a thicker skin, layer on two rice paper sheets. Arrange the shrimps, add some spring onions, and start to roll the rice paper. Brush on oil on the rolls so they do not stick to each other.
  • Cook the rice paper rolls until the shrimps cook.
    Steam:
    Place rice paper rolls on an oiled plate or container for steaming. Steam for about 5 minutes, or until shrimp fully cooks.
    Boiling:
    Gently lower rice paper rolls in a pot of boiling water. Boil for about 5 minutes, or until shrimp fully cooks.
    Microwave:
    Place rice paper rolls on an oiled microwave-proof plate or container. Pop in the microwave on high at 1 minute intervals until shrimp is fully cooked. Shrimp should be completely orange and has curled.
  • Combine all the ingredients for the seasoning sauce. Drizzle over the chee cheong fun and serve immediately!
