I remembered wondering why this wasn’t on the menus at the places we ate in Istanbul! While it’s a shame my only experience of manti was at an airport, the flavours left such an impression that I’ve been craving it ever since.

It’s a beautiful blend of creamy, savory, and spicy flavors, with fresh tomatoes and herbs adding brightness.

- Spices: Sweet paprika is all you need! Adjust to taste.

- In a small bowl, mix the yogurt, minced garlic, and salt.

PRO TIP! I actually cooked the beef and pasta at the same time and this was the way Anna Paul’s family does it as well. I love how incredibly efficient this was. However, if you’re not too confident you can cook this at the same time, I suggest to follow this recipe – cook the beef first, before the pasta.
4. Make the Paprika Butter Sauce:
- In a small saucepan, melt butter over low heat.
- Stir in paprika and heat gently for 30 seconds until aromatic, or when butter starts bubbling and has taken on a reddish hue.
NOTE: Use a low heat to gently infuse the butter with the spice. Do not use too high a heat, as you might burn the paprika!
5. Assemble the Dish:
- In serving bowls, layer the pasta as the base.
- Top with yogurt sauce, spiced beef, and drizzle with the paprika butter sauce.
- Garnish with cherry tomatoes and parsley or cilantro.
- Before eating, mix everything and enjoy!
