How to make a delicious and quick Malay-style Mee Goreng to satisfy your cravings!
Today we’re making Mee Goreng, or Malay style Fried Noodles. These spicy fried noodles are a staple hawker and street food fare in Singapore and Malaysia. This is so easy to make, and it’s my favourite thing to whip up when I’m pressed for time for lunch. It’s also so easy to dress up; toss in some shrimps, fishcake and squids rings and it becomes a fancier Mee Goreng. To make this version, check out my Seafood Mee Goreng post!
This is a much simpler version that takes me no more than 15 minutes to whip up – especially since I always have dried chilli paste in my fridge. You can also use ready made sambal oelek for this.
Ingredients for Easy Mee Goreng
- Yellow Hokkien Noodles: These are the usual type of noodles used, but today you’d find Mee Goreng done with all sorts of noodles! Vermicelli, kway teow rice noodles, even with instant noodles.
- Dried Chilli Paste: This adds a rich, deep spice to the noodle dish. Alternatively, you can also use any ready-made sambal of choice that can be found easily in supermarkets. With ready-made sambal, you do not need to go through the ‘oil splitting’ process.
- Oyster Sauce
- Dark Sweet Soya Sauce or Kicap Manis
- Tomato Ketchup
- Onions & Garlic
- Egg: I personally CANNOT have my plate of Mee Goreng without an egg scrambled in!
- Proteins of Choice: For easy Mee Goreng, I would just use whatever I need to use up in the fridge… or not at all! I’m usually quite happy with just eggs.
- Vegetables of Choice: Leafy vegetables or vegetables that cook quick, work best for this.
How to make this even easier?
The most intimidating part of making Mee Goreng would be cooking down the dried chilli paste. The best solution to this? Replace it with a ready-made sambal sauce! Any will work, such as this and this, as long as you like the flavour of it. Sambal Oelek is a popular spicy sauce that is widely available.
To make it EVEN easier, combine the sambal with the oyster sauce, kicap manis and tomato ketchup before beginning the stir frying process. This is what I do ALL the time! I like to add a splash of water, just so it’s a saucier consistency to toss with the noodles.

- 200 g of Asian Yellow Noodles
- Sauce:
- 1 tbsp Oyster sauce
- 1 tbsp Dark Sweet Soya Sauce or Kicap Manis
- 1 tbsp Tomato Ketchup
- 2 cloves Chopped Garlic
- 2 tbsps Dried Chilli Paste
- Protein of choice
- I’m using Fried Tau Kee or Fish meat wrapped in dried beancurd skin
- Veggies
- I’m using Yau Mak Chye and Bok Choy
- Optional: 2 tbsps Water
- 2tbsps Oil to Cook
