I wanted to have some form of creamy pasta noodle dish, but I was too lazy to boil pasta – nobody talks about this enough: cooking pasta is a process in itself, first you have to take out a huge pot, fill it with water, wait for it to boil, cook your pasta, set a timer, drain the pasta and THEN your noodles are ready. I had udon packs ready to go, so I replaced pasta with my udon and I enjoyed it SO MUCH MORE! This Creamy Udon is a perfect fusion of thick udon noodles, chicken, and a luscious creamy mushroomy garlic sauce that will have you coming back for seconds.

There is no prep needed for the noodles in this recipe, as it will cook in the sauce. If using frozen or dried udon, prepare according to package instructions beforehand.
- Mushrooms : Mushrooms contribute earthy flavours and a satisfying chewiness, enhancing the overall umami richness of the dish. I used just shiitake mushrooms here, but you can use any mix of mushrooms you like such as shiitake, cremini, and button mushroom to add depth and a delightful texture.

You can also use unsalted chicken stock for the recipe – if if using boxed versions, adjust the salt levels accordingly. You might be able to get away without adding additional salt at all. You can also just use water.
How to Make Creamy Udon
1. Sear Chicken
Add oil to a pan and heat over medium-heat. Add sliced chicken, and season with salt and pepper. Sear until golden brown and cooked through. Remove from the pan.
2. Sauté Mushrooms and Garlic
Using the same pan, add garlic and mushrooms. Season mushrooms with a pinch of salt and pepper. Cook mushrooms until it softens.
3. Make the Creamy Udon Sauce
Add heavy cream, chicken broth or water, and light soy sauce to season. Allow to simmer until the sauce comes to a boil.
4. Combine Everything
Add udon noodles, and return chicken to the skillet. Gently wiggle the udon noodles loose, and stir to combine with the cream, ensuring they’re well-coated with the creamy garlic sauce. Allow to cook for 1-2 minutes, and turn off the heat!
5. Serve and Garnish
