From Simple to Spectacular: Elevating Eggs with Chili Oil and Cheese with three ingredients in three steps!
Eggs + Chilli Oil + Cheese = Perfection! Ever since I discovered this Crispy Cheese Chilli Oil Eggs, I could not stop making it. The luxurious creaminess of eggs flavoured with the fiery kick of chili oil, on a bed of cheese that is pan fried to a crisp. This would be great as a quick breakfast over bread, but I tried this with rice and LOVED the results. This is potentially going to be my new favourite quick lunch.

Key Ingredients
- Eggs: The star of the show, eggs bring their inherent creaminess and protein-rich goodness to the dish.
- Chili Oil: This spicy elixir adds depth and a tantalising heat that elevates the eggs to a whole new level. Use any chilli oil you like, but of course, I used my own recipe right here.
- Cheese: Cheese not only adds delicious flavour to the eggs and a perfect complement to the spicy chilli oil, it also forms that crispy base for the eggs. The best cheeses to use for this would be cheddar (what I prefer) and mozzarella. You can also use processed cheese slices.
- Salt & Pepper: This is to taste, but I find that I never need to further season my egg dish. The Chilli Oil already has seasoning, and cheese adds a dash of salt as well.
How to Make Crispy Cheese Chilli Oil Eggs
This is one of the quickest dishes ever! We get a delicious meal in just three easy steps!
1. Add Chilli Oil
Heat pan over medium heat. Add chilli oil to the pan, and allow it to sizzle.
2. Add cheese
Sprinkle on 3/4 of the grated cheese over the chilli oil. Spread about the pan. Cheese will start to melt and bubble.
3. Pour in Eggs
Crack eggs and pour over the cheese. Sprinkle on the remaining cheese over the eggs. Allow eggs to cook. Option to cover with a lid to cook the tops quicker.
Once the egg whites are set, and yolks are cooked to preferred doneness, turn off the heat and immediately remove from the heat. Do not leave the pan on the stove for too long, as it might burn the cheese. Garnish with spring onions, or fresh herb of choice.
How to Serve Crispy Cheese Chilli Oil Eggs
This is a great breakfast dish, to be serve over toasted bread. Personally I think this can also be a fantastic quick lunch or dinner meal! Serve this over rice, with vegetables on the side and this becomes a complete meal.
