How to make super easy, quick, decadently luscious, garlicky ‘Carbonara’ noodles.
Today we’re making a super garlicky, creamy, luscious fried noodles dish that is kinda carbonara, but I love this with these yellow noodles.
The yellow noodles are often sold ready-to-use, which just means I don’t have to go through the extra step of cooking pasta. Lazy hack. This is lunch in 10 minutes, incredibly effortless but super satisfying.
It’s all about that carbonara bowl that you prepare beforehand. Crack an egg, and shave lots of parmesan in and stir that together. This is that magical mixture that makes this so creamy and luscious. Can you use packaged shredded cheese? Not really. Usually it has additives to prevent it from sticking together in the pack, therefore it’s not going to melt as freshly shredded cheese. In a pinch it will work, if all you’re after is taste, not texture.
The secret to getting creamy carbonara is to turn off the heat, and stir in the egg-cheese sauce with the noodles while the pan is still hot. This also prevents scrambled eggs carbonara.
Ingredients
- 150g of Yellow Noodles
- 1 Egg
- 2 tbsp Parmesan Cheese
- 1 tbsp Butter
- 1 tbsp Oil
- 2-3 cloves of Garlic
- Optional: Bird’s Eye Chilis
- Salt and Pepper
Directions:
- Prepare the carbonara bowl first. Crack an egg in a bowl, and shave lots of parmesan cheese in, about 1 to 2 tablespoons of it. Whisk that together and keep to one side.
- In a pan, get some oil in and drop the butter in. Keep the heat low to medium.
- Once the butter has melted, add in your garlic. If you’re using the thai bird’s eye chilis, add that in as well.
- Once you start smelling the garlic, toss in the yellow noodles.
- Season the noodles with salt and pepper.
- Turn the heat off and let the pan cool off just until you barely hear sizzling. About 30 seconds or so.
- Drop in the carbonara bowl, and stir into the noodles.
- Serve.
