I’m not a big fusion person, EXCEPT when it comes to noodles and pastas! In my mind it makes sense that noodles and pastas should be interchangeable. This Miso Chili Oil Pasta is easy and delicious, and also incredibly versatile! Perfect for those busy days when you crave something comforting but exciting. With minimal ingredients and a simple process, this pasta will quickly become a staple in your kitchen. Trust me, it’s a game-changer!

  • 2 servings or 1 cup/100g of pasta. penne (or pasta of choice)

  • 2 tbsp chili oil

  • 2 cloves garlic, minced

  • 1 tbsp miso paste

  • 1 tbsp Parmesan cheese, grated (plus extra for serving)

  • Spring onions, finely chopped (for garnish)

Directions

  • Cook the Pasta: Start by boiling your pasta in salted water until al dente. Reserve some pasta water before draining.
  • Prepare the Sauce: In a large pan, heat chilli oil over medium heat. Add minced garlic and cook until fragrant. Stir in the miso paste and some pasta water, to create a sauce. Mix well until everything is combined.
  • Combine Pasta and Sauce: Add the cooked pasta to the pan. Toss everything together until the pasta is well coated with the sauce. If needed, add more reserved pasta for easier stirring. Sprinkle on parmesan and stir to combine.
