If I have one guilty pleasure weakness, it’s instant noodles! I’m open to try any instant noodle hack and this Kewpie Carbonara Ramen is one of the best ones I’ve come across! It’s simple, and it produces a ramen that is SO creamy and tasty. It’s not complicated too, and you can’t taste the ‘hack’ ingredients. Perfect for a speedy meal that’s sure to impress, for when you want a creamy noodle with the soupy pack that you already have and you don’t want to go and get new noodles – who’s got the pantry space!

- Instant Ramen: The base of the dish, providing a quick and easy foundation. The original hack uses the Buldak Carbonara Instant Noodle, but I used Shin Ramyun. Any soup ramyun will work for this.
- Kewpie Mayo: The star of the dish, providing creamy, umami richness. Kewpie Mayo is my mayo of choice at home – it has a certain umami and sweetness to it, quite unlike regular mayo. If you don’t have kewpie, you can use regular mayonnaise.
- Egg Yolk: Adds richness and helps create that velvety sauce! I use just the yolk, but you can use the whole egg too.
- Instant Ramen Seasoning: The seasoning pack from the instant ramen goes straight into the carbonara bowl!
- Garlic Powder or Minced Garlic: Enhances the flavour with a hint of garlic.
- Toppings: Eggs, sliced beef, and veggies (quickly boiled in the same noodle water) and roasted seaweed, for added texture and flavor.
- Spring Onions: For a fresh, crunchy garnish.
Key Steps to Making Kewpie Carbonara Ramen
1. Prepare the Sauce
- In a bowl, mix together the egg yolk, Kewpie mayo, garlic powder (or minced garlic), and the seasoning packet from the instant ramen.
- Stir until well combined and smooth.
2. Cook the Ramen
- Bring 2 cups of water (or however much required on the noodle pack) to a boil in a pot. Add the ramen noodles and any dehydrated vegetables. Cook according to the packet instructions until al dente. This usually takes about 2-3 minutes.
- If you’re adding any protein or fresh veggies, you can quickly boil them in the same pot with the noodles during the last minute of cooking.
3. Combine Noodles and Sauce
- Once the noodles are cooked, use tongs or a fork to transfer them directly into the bowl with the sauce mixture.
- Don’t completely drain or dry the noodles; we want some residual liquid on them!
- Mix the noodles thoroughly with the sauce to create a creamy paste that coats the noodles.
- Make sure to add just the noodles first, and not the boiling water, to prevent scrambling the egg.
4. Add the Soup
- Gradually pour in the reserved noodle cooking water, stirring continuously, until you achieve the desired consistency for your sauce.

TIP! For a creamier ramen, add less water – just about 1/2 to 1 cup of the cooking water – depending on how saucy you want it. Be sure to add lesser of the seasoning sachet so it’s not too salty.
5. Add Toppings (optional) & Serve
- Top the noodles with your choice of boiled egg, sliced beef, and veggies. Garnish with chopped spring onions and roasted seaweed for a crunchy finish.

Serve your Kewpie Carbonara Ramen HOT, in a large bowl. I like to add toppings on mine, in the form of proteins and vegetables, so that at least we have some real nutrition with our junk food.

Tips and Tricks
- Creamier Noodles: If you want a less soupy noodle, and a creamier finish, add less noodle water! You might want to add lesser amount of the seasoning sachet so that it’s not so salty
- Prevent Scrambling: Add the noodles to the sauce before adding the cooking water to prevent the egg from scrambling.
- Add Cheese: If I had some parmesan on hand, I would definitely have added this to the carbonara bowl too!
- Garlic Options: If you love garlic, use freshly minced garlic for a more intense flavour.
