How to make this easy, Malay vegetable dish, Taugeh Goreng Ikan Bilis or Beansprout Anchovy Stir Fry.
“What vegetable dishes to cook with Malay food?” is low-key the most common question I get from my non-Malay friends.
There’s not much vegetable dishes in Malay cuisine, but this is probably that one staple that everyone is familiar with. This is easy, quick, but most importantly tastes light – the perfect vegetable side dish for our heavily-spiced Malay dishes!
What is Ikan Bilis or Dried Anchovies
The key ingredient here is the Ikan Bilis, or dried anchovies. This ingredient adds that extra layer of umami flavour that really can’t be duplicated with anything else.
To prepare the ikan bilis, give them a quick rinse under water. Saute until the fragrance lifts and continue with the recipe.
Ground the ikan bilis to a powder – if you’re willing to go the extra step. This would boost the flavour even more and really coat the taugeh with it.
Ikan Bilis is an ultra familiar Asian ingredient that you can find easily at supermarkets.
For those not in Asia, look out for this ingredient at Asian markets. Korean dried anchovies or myeolchi are a close alternative, although note that it will be bigger than our ikan bilis.
Can I use other Vegetables for Taugeh Goreng?
Although this dish is most commonly made with beansprouts or taugeh, you can actually use this same combination of seasonings from pretty much any vegetable! In fact, as a bok choy lover, I always swap out the taugeh for the leafy vegetables.
