How to make Tom Yum Fried Rice.
Today we’re making yet another fried rice – Tom Yum Fried Rice. This requires just a bit more effort than the usual fried rice, but trust me it’s worth it.
Funny story: I meant to make the typical Tom Yum Soup first, but then I had a huge craving for Tom Yum Fried Rice. It’s all about that Tom Yum base paste which can also be used to make Tom Yum Soup, Tom Yam Noodles, or stirfried with chicken and vegetables, and you have the perfect dish to serve over rice. Make a big batch and double, triple, this portion so you have it ready to go in the fridge.
Recipe
- 2 Cups of Rice
- 100g Protein of choice
- Sliced chicken meat
- Shrimps
- Veggies cus veggies are good for you
- 1 Onions
- 2 Cloves Garlic
- 3 Eggs
- Tom Yam Paste
- 1 lemongrass Stalk
- 4-5 Kaffir Lime Leaves
- 1 tablespoon of Galangal or Blue Ginger
- 2 tbsp of Dried Chili Paste (see recipe: https://nomadette.com/recipe-basic-malay-sambal-dried-chili-paste/)
- Juice from 1 tbsp Tamarind
- Seasoning Sauce:
- 2 tbsps fish sauce
- 1 tbsp light soy sauce
- 1 tsp sugar (I’m using Gula Melaka sauce)
- Garnish with a squeeze of Lime juice
- Garnish with cilantro
Directions:
- Blend Tom Yam paste ingredients: chopped lemongrass, galangal, kaffir lime leaves. Add the dried chilli paste, and juice from tamarind. One tablespoon of tamarind, pour hot water over it, just enough to cover, and leave it for about 5 minutes to loosen up. We only need the juice.
- Prepare seasoning sauce for the fried rice beforehand for the sake of effienciency.
- Add oil to the pan. Over low heat, add the tom yam base paste, stirfry until it cooks. It’s cooked when the paste intensifies into a darker red and is dryer. The oil will also start to separate.
- Once the paste cooks add in the garlic and onions and toss it in with the paste.
- Once the onions wilt, add in your proteins. Let that cook.
- Scramble in eggs, and stirfry that in. You can also leave this out and fry the eggs instead to top the rice.
- Next add in the rice, and pour over the seasoning sauce mix. Gently toss it in with the spices and the proteins.
- Vegetables next.
- Turn the heat off, and garnish with cilantro and lime juice.
