An easy stir fry recipe for Cashew Chicken.
Today we’re making Thai Cashew Chicken Stirfry. This is a tangy, sweet stirfry with an addictive crunch of cashew nuts, and extremely easy to make.
This is not an authentic Thai recipe, but a lot more practical as it uses easier to find ingredients (to me). It’s all about that sweet and sour, and mild spice in the dish.
Specifically the cheat ingredients here are tomato ketchup and chilli sauce. I used Thai Sweet Chilli Sauce, which is more sweet, and not too spicy, but any chilli sauce will work. If using Sriracha, it will be spicier and not as sweet, so add an extra teaspoon of sugar.
Ingredients
- 300 grams Chicken
- 1 tsp Light Soy Sauce
- 1/2 tsp White Pepper
- 1 tsp Cornstarch
- 40 grams Cashews
- 4-5 stalks of Dried Chillies, soaked in boiling water.
- 1/2 an Onion
- 1-2 Garlic Cloves
- 1 tbsp Sesame Oil
- Seasoning Sauce:
- 4 tbsps Tomato Sauce
- 2 tbsps Thai Sweet Chilli Sauce
- 1 tbsp Light Soy Sauce
- 3-4 tbsps Water
- 1 tsp Cornstarch
- 3 tsps Sugar
Directions
- Marinade chicken with light soy sauce, white pepper, and corn starch.
2. Prepare seasoning sauce bowl.
3. Heat up oil in a pan, and sear marinated chicken first.
4. Once you get a sear on both sides, drizzle in sesame oil and chopped garlic. Also add in dried chillies, and if using raw cashews, add that in now too.
5. If using roasted cashews like me, add it in once you smell the dried chillies.
6. Next, toss in onions, as well as chopped green beans.
7. Now add in your seasoning sauce bowl. If you want a bit more gravy, add in more water.
8. Once the chicken is cooked through, and the sauce bubbles and thickens, you are done!
